  • Green: asparagus, beany, brussel sprouts, celery, parsley, spinach, green beans, green herb-like.
  • Brown: ashy, sooty, brown spice, scorched, nutty and tobacco .
  • Fruity/Floral: fruity, floral, citrus, fermented, Mouthfestringent, tooth-etching
  • Basic tastes: sweet and bitter
  • Other attributes: almond, animalistic, grain, musty, new leather, mint, seaweed, straw-like.

 

*Brown related –astringency becomes stronger , and green-related attributes are weaker.. When brewing time lengthens from 1,2,5 and 20 minutes and water temp increased from 50, 70 to 95 Degrees Celsius.

 

Green tea in leaf form can be brewed 4 times. The first 2 times provide stronger flavor and aroma whereas 3rd and 4th brews will provide milder flavor and aroma.

Flavor: Malty, smoky, brisk, earthy, spiced, nutty, metallic, citrus, caramel, leather, fruity, sweet and honey.

 

Black tea differs from other types of tea because it has undergone a process of complete oxidation.

 

During this process, he polyphenols of the leaves have been oxidized, causing darkening of the leaves . It is also known as fermented tea.

 

A cup of black tea provides half as much caffeine as coffee.
In addition, black tea contains a certain amount of tannins, which help regulate the absorption of caffeine so its effects are not as immediate.

 

During processing, it’s polyphenols are oxidized, so that the antioxidant capacity will be lower than green tea. However, it retains some of its active ingredients (catechins) to help with reducing cholesterol and preventing Parkinson’s disease.

1) Orthodox:
Tea is freshly plucked from garden.
The local tea is then withered to reduce moisture.
We then carefully roll the tea in a variety of ways to bruise leaves and start oxidation. Oxidized to create color/flavor,
The final process in our Mississippi grown tea is to apply heat that stops oxidation and then is graded for quality.

 

2) Non-Orthodox (Crush-Tear-Curl)
Tea leaves are cut into fine pieces instead of rolled. The smaller pieces of leaves are more quick oxidized, producing a one-dimensional, consistent, strong bold black tea.
